This easy beef marinade only takes a few minutes to put together. It ain’t pretty but it does a great job tenderizing the meat and infusing it with so much flavor.

Adobo Sauce- scoop it from the can. If you like extra spicy meat, use the -Chipotle peppers in Adobo sauce (you may want to wear gloves if you have sensitive skin. Just scrape the seeds out of the pepper and mince the peppers. Lime juice (or the juice of 2 large limes) You can also sub half orange or lemon juice. Some people use soy sauce in their carne asada recipe but this one is more sweet, spicy, and salty.
Gather all the ingredients for the marinade. Peel and smash the garlic. Remove the stems from the cilantro, then rinse the leaves and pat dry. Brush the oil on a cast iron grill pan and place it over medium high heat until the oil is shimmering, roughly 2 minutes. Carefully place one of the skirt steaks on the grill with tongs and sear the outside of the meat for one minute, then turn down the heat to medium and cook for 2 more minutes. Flip and cook for 3 minutes. Skirt steak is thin, so it cooks fast. Check the doneness using a meat thermometer; the internal temperature should be 135 F for rare or 145 F for medium-rare. Repeat with the other two steaks.
